What a gluten-free diet is

No gluten: the protein in wheat, barley, rye, and foods made from them. Some people must avoid it. Others choose to.

  • Celiac disease. An autoimmune reaction to gluten that damages the small-intestine lining. Ongoing exposure causes serious harm.
  • Non-celiac gluten sensitivity. Gut and other symptoms after gluten, without celiac disease.
  • Wheat allergy. An immune reaction to wheat proteins. Can be hives or anaphylaxis.
  • Some people without a diagnosis feel less bloated off gluten.
  • Some report more energy. That is anecdotal, not a reason to put a healthy gluten-eater on this diet.
  • Weight can fall if the new week is whole food instead of gluten-free biscuits. The gluten-free aisle is not automatically healthier.

The 2,000 kcal gluten-free week

A general-use week at about 2,000 calories. For celiac clients, every ingredient still needs a gluten-free check. This template is a starting point, not a certified celiac menu.

What is in the week

  • No gluten-containing ingredients. Fruit, vegetables, lean protein, legumes, rice, and quinoa.
  • Mixed macros and micronutrients.
  • A mix of recipes so the week is not only rice and chicken.
  • Easy to edit for extra allergies and likes.
  • Breakfast, lunch, dinner, and snacks a client can actually cook.

How to use this template in your practice

Set macros, add extra allergen exclusions, and change portions. For celiac disease, check every packaged item.

Export a branded PDF and send it through the portal. The grocery list should name gluten-free products, not generic wheat versions.
